This healthy, filling Strawberry Spinach Salad is tossed in a touch of sweet, Orange Honey Dressing.
Being on a high-nutritional diet means eating lots and lots of vegetables every day. This usually includes a lot of different salads, but sometimes my husband and I get tired of eating salads all the time. This strawberry spinach salad is a nice change from the typical leafy greens, with a little touch of sweetness.
Now that spring is here, the spinach is growing in the garden and the strawberries are on sale at the grocery store. This is the perfect time to make this salad, either as a meal on its own or with some protein. We like it with salmon sprinkled with dill and a touch of the orange honey dressing on top.
I originally added pine nuts, but after seeing how much they cost in the store (I was sticker shocked!!!), I use sesame seeds or cashews but any nuts will do.
Strawberry Spinach Salad Instructions:
Prepare orange honey dressing, shake in a tightly covered container & set aside.
Wash & thoroughly blot spinach leaves with paper towels until dry.
Mix all salad ingredients minus the nuts/seeds.
Add dressing and toss.
Sprinkle with nuts/seeds.
If you’re on the Autoimmune Protocol omit the nuts/seeds, and be careful with the honey.
If you are following the Wahls Protocol soak the nuts/seeds for 12-24 hrs. before using.
Soaked nuts & seeds get a little chewy, so I like to toast them to bring back the crunchiness & intensify the flavor. To toast the nuts/seeds, blot dry then cook in an ungreased skillet over medium-low heat for 5-7 minutes. This also helps the nuts/seeds from going moldy too quickly. Stir frequently until browning begins, then stir constantly until golden brown.
Did you know? If you buy organic strawberries, and you should buy organic, they are one of the dirty dozen! You can eat the green tops! Just wash the strawberries and no need to cut the tops off, this also speeds up the preparation. Then count them as part of your leafy greens for the day!
I count 1 serving as 1 cup of dark leafy green, 1 cup of fruit, 1 tbs sulfur, and 1 tsp honey.
The oil & OJ is so small I don’t count it. If you want to count them, you could count about 1/3 tsp oil, and about 1/4 tsp OJ per serving.

Ingredients
Strawberry Spinach Salad
- 12 cups bite-sized pieces spinach
- 1 pint 2 cups strawberries, sliced
- ½ cup green onions sliced
- ¼ cup cashews or sesame seeds
- 2 mandarin oranges cut into segments
Orange Honey Dressing
- ¼ cup orange juice about 1/2-1 orange
- ¼ cup raw honey
- 2 tablespoons extra virgin olive oil
Instructions
- Prepare orange honey dressing, shake in tightly covered container & set aside.
- Wash & thoroughly blot spinach leaves with paper towels until dry. Mix all salad ingredients together minus the nuts/seeds. Add dressing and toss.
- Sprinkle with nuts/seeds.
