These roasted broccoli florets come together quickly, it’s the perfect and easy side dish to any meal!
This lemon garlic roasted broccoli is so tasty and simple to make, you’ll want to make these over and over. They make a perfect side dish or just to snack on, which is what I like to do.
I also like to toss the broccoli in coconut oil instead of olive oil. It’s important to use fresh broccoli instead of frozen or it will make the coconut oil harden up.
It is extremely important to include (at least) 3 tablespoon of coconut oil each day, so this is a good way to get a little more in.
Broccoli and garlic are both sulfur-containing foods, sulfur is key to health because it helps resist bacteria and removes toxins from cells.
Garlic has also been used for thousands of years as a medicinal food to treat different ailments and brain health, it can even combat the common cold.
Coconut oil contains fatty acids with powerful medicinal properties, it also boosts brain function.
I like to melt the coconut oil in the oven as I’m cutting the broccoli, then mix everything together.
Roasted broccoli has a wonderful caramelized flavor, it taste especially good with lemon drizzled over it.
Depending on how crispy you like the broccoli will depend on how long you leave it in the oven. I like my broccoli crispy, so I usually cook it for 15-20 minutes.
Check it after 10 minutes, then continue cooking it if you want it a little crisper.
Once it’s done place the broccoli into a serving dish and drizzle lemon juice over it. Again, it depends on your taste as to how much lemon juice you want. You can use anywhere from 1/4-1 full lemon depending on the size of the lemon, I like to use 1/2-3/4 lemon.
However you prefer it, lemon garlic roasted broccoli is an easy and delicious side dish.
Lemon Garlic Roasted Broccoli
Ingredients
- 1 to 1-1/2 tablespoons coconut oil
- 1 head broccoli
- 1 lemon
- Salt and pepper to taste
Instructions
- Preheat oven to 425 degrees.
- Cut broccoli into florets and toss with coconut oil (melted), salt and pepper.
- Roast on baking sheet 10-20 minutes, until broccoli is crisp tender and caramelized to your liking.
- Place into a serving dish and drizzle lemon juice over the top.
