This is a quick and easy slaw and takes only minutes to prepare so you can get it to the table in no time at all.
Spring is officially here, it actually arrived a couple weeks ago, you wouldn’t have been able to tell with the strong winds, rain, and hail. The past two weeks we lost our power, for hours, 3 different times due to the inclement weather! I do love spring, the cold weather is finally behind us (for the most part), flowers are popping up, signs of life are everywhere and it is time to enjoy spring’s bountiful produce.
Radishes are a spring vegetable meaning they are at their peak of freshness and taste, the raw radishes add a nice little crunch to the slaw. You can eat radishes raw or cooked whichever you prefer, you can eat the pods and the leaves so include them in the slaw. Prepare all the vegetables before starting to heat the skillet, it takes longer to prepare than it does to cook it. Once everything is added to the skillet it only takes a few minutes before it’s done.
Radishes aren’t on the Environmental Working Groups Dirty Dozen list, they also aren’t on the Clean Fifteen list so it’s up to you whether you want to buy organic or not.
Radishes are very good for your liver, they act as a powerful detoxifier eliminating toxins and waste. Radishes are also a diuretic, meaning they increase the production of urine, which also helps remove toxins.
Classic Garden Slaw
Ingredients
- ½ large cabbage or 1 small cabbage
- 2- Carrots shredded
- 4- Radishes chopped
- 4- Scallions thinly chopped
- 2 tablespoons coconut oil
- 1 tablespoon apple cider vinegar
- Juice from 1 lemon
- 2 garlic cloves minced
- 1 teaspoon ginger
- Sea salt and fresh ground pepper to taste
- Parsley to garnish optional
- 1 tablespoon flaxseed optional
Instructions
- In a large skillet over medium heat melt the coconut oil then add the garlic and scallions, stir for one minute.
- Add cabbage, carrots, apple cider vinegar, lemon juice, ginger, salt, and pepper.
- Stir for 3 minutes.
- Remove from heat and stir in the radishes and flaxseed.
- Serve warm or cold.
