Indulge in a delectable creamy green bean recipe. It is bursting with the savory goodness of sautéed mushrooms, onions, and fresh green beans. It is seasoned for an easy-to-make and irresistibly flavorful plant-based delight.
With the holidays just around the corner, I wanted to make the classic green bean casserole dish. I can’t use the traditional recipe since it uses ingredients such as modified food starch.
There are many paleo recipes but they took a long time to make. First, you have to make the mushroom soup recipe, then the onion recipe, then put it all together. I wanted a recipe that was extremely simple to make.
This isn’t the traditional green bean casserole dish. But it’s both easy to make and bursting with seasonal goodness. Plus, it embraces the flavors of fall.
First, line up the green beans and trim off the ends. Then do the same for the other end. You can leave the green beans long or cut them into bite-sized pieces, I cut mine.
On the stove, on medium heat sautéed diced onions in a quarter cup of water stirring occasionally.
Meanwhile, chop the mushrooms into small pieces.
When the water is steamed off, let the onions brown then add another quarter cup of water along with the mushrooms, green beans, 1/4 teaspoon cinnamon, and a sprinkling of cloves, ginger, and nutmeg.
Cover and let it steam for 5-7 minutes until the beans are tender to your preference. Once done remove the lid and stir until the water has evaporated.
Remove from the stovetop and add 1/4 cup coconut milk. Stir until thoroughly mixed.

Autumn Spice Green Bean Delight
Ingredients
- ½ cup Water divided
- 1 pound Fresh Green Beans trimmed
- ½ Yellow Onion diced
- 4 ounces Baby Bella Mushrooms chopped
- ¼ teaspoon Cinnamon
- ⅛ teaspoon Cloves
- ⅛ teaspoon Ginger
- ⅛ teaspoon Nutmeg
- ¼ cup Coconut Milk
Instructions
- Line up the green beans and trim off the ends. Then do the same for the other end. You can leave them long or cut the beans into bite-sized pieces.
- On the stove-top on medium heat sautèed the onions in a quarter cup of water stirring occassionally.
- Chop the mushrooms into small pieces.
- When the water is steamed off, let the onions brown for about 30 seconds.
- Add another quarter cup of water along with the mushrooms, green beans, and seasonings.
- Cover and let it steam for 5-7 minutes until the beans are tender to your preference.
- Once done remove the lid and stir until the water has evaporated.
- Remove from the stovetop and add 1/4 cup coconut milk. Stir until thoroughly mixed.
