A moist and soft orange-filled cookie with chocolate frosting. These orange chocolate Paleo cookies are so easy and delicious that they will disappear quickly.
Are you one of the lucky ones in the path of the solar eclipse this year? Fortunately, I’m one of those lucky ones, I don’t even have to leave my house! It’s not 100% but 99.03% is close enough.
This is a huge event for my state, they are expecting thousands of people to show up throughout the southern part of our state. So I decided with all this anticipation I’d come up with an “eclipse” cookie.
I wanted a yellow cookie (the sun) with a dark center (the shadow). Of course, I immediately thought of chocolate frosting for the shadow. My first thought was a lemon cookie but lemon and chocolate didn’t sound good together.
Then I thought of those orange chocolate balls that are available around Christmas. I used to love those, back when I ate processed foods. I haven’t eaten one of those in many years but I still have fond memories of that flavor combination. So, I decided to make an orange cookie with chocolate frosting.
I’m all about making simple recipes, the quicker and fewer ingredients the better. This recipe is perfect because you probably already have most of the ingredients in your pantry right now.
To make it go quickly, I gather all the ingredients with the measuring tools first. Add all the wet ingredients to a large mixing bowl. In a smaller bowl add all the dry ingredients and mix.
Add one-third of the dry ingredients to the wet and mix until smooth. Next, add the next third and mix the last of the dry ingredients and mix.
Place it in the refrigerator for half an hour to let it firm up a little. Once done roll the dough into a ball and cut it in half. Cut each half into quarters so you end up with eight little sections.
Roll each section into a ball and place it onto parchment paper, slightly flattening each ball. Pop it into the oven and bake for about ten minutes.
For the chocolate frosting there are a few different ways you can make it depending on how strict you are with your diet. You could use melted chocolate chips or you can make a frosting. For this recipe, I used cocoa powder but you could also use melted dark chocolate.
I don’t like frosting, I never have. I was always the one who asked for the piece of cake with the least amount of frosting. So I prefer to eat these cookies without the frosting.
Orange Chocolate Paleo Cookies
Ingredients
For Cookies
- ¼ cup unrefined coconut oil melted
- 2 teaspoons orange extract
- ⅓ cup maple syrup grade A
- 1 ⅓ cups almond flour
- 2 tablespoons coconut flour
- ½ teaspoon baking soda
- ⅛ teaspoon sea salt
For Frosting
- 1 - 13.5 ounce can full-fat coconut milk refrigerated overnight
- ½ cup palm shortening
- ½ cup honey or 1 teaspoon Stevia
- 1 tablespoon cocoa powder
- 1 teaspoon vanilla extract
- ¼ teaspoon orange extract
Instructions
- Preheat the oven to 350º F
- Add all the wet ingredients to a large mixing bowl. In a smaller bowl add all the dry ingredients and mix. Then add one third of the dry ingredients to the wet ingredients and mix until smooth.
- Next add the second third of the dry ingredients to the wet ingredients and mix. Finally the last of the dry ingredients and mix.
- Place it in the refrigerator for half an hour to let it firm up a little. Once done roll the dough into a ball and cut it in half. Cut each half into quarters so you end up with eight little sections.
- Roll each section into a ball and place onto cookie sheet lined with parchment paper, slightly flatten each ball. Place the cookie sheet into the oven and bake for about 10-11 minutes.
- The cookies will be cracked which is normal. Let them cool completely before frosting.
For Frosting
- Carefully flip coconut milk can over and open the bottom of the can. Scoop off 1/2 cup of the cream that is now at the top. Add palm shortening and mix with stand mixer or hand held mixer, beat until creamy.
- Add the remaining ingredients and continue to mix until smooth and creamy. Place into refrigerator for 10 minutes to firm before spreading onto cookies.
