I’ve been working on a soft gluten-free, dairy-free cookie recipe for a long time and I finally got it just right! With minimal effort, you can savor the joy of homemade treats using whole-plant foods. The best part is you probably already have most of these ingredients in your pantry. – Well maybe not the dried cranberries but since they are in season right now I decided to use them.
I don’t know about you, but there’s something incredibly satisfying about the tender, melt-in-your-mouth goodness of soft cookies that just wins me over every time. Ready to savor the pure comfort and joy in each bite as these soft cookies melt in your mouth?
Here’s a simple recipe for soft and delicious cranberry cookies using whole plant-based ingredients!
Cranberry Cookie Recipe
First, preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Next gather up all your ingredients which include:
- 1 cup cassava flour
- 1/2 cup mashed ripe banana (1-2 bananas depending on size)
- 1/4 cup coconut oil (melted)
- 1/4 cup maple syrup
- 1/2 teaspoon cream of tartar (it’s dairy-free)
- 1/2 teaspoon cinnamon
- 1/4 dried cranberries
In a large mixing bowl add the dry ingredients and stir thoroughly. In a smaller bowl mash the banana until you get 1/2 cup then add the melted coconut oil and maple syrup. Stir until it’s well blended then slowly add it to the dry mixture.
Use a spoon to drop spoonfuls of the cookie dough onto the prepared baking sheet. I used my fingers and rolled them into equal-sized balls. Then flatten them using your fingers or the back of a spoon.

Gluten-free cookies maintain a similar appearance before baking and after baking. They often retain their shape and texture. This can make it challenging to distinguish if they are done or not. What I did was after 10 minutes I removed them from the oven and then left them on the baking sheet for a few minutes before transferring them to cool completely.
The cookies turned out perfect but if they are still a little doughy after breaking them apart put them back in the oven for 1-2 minutes.

Easy Soft Cranberry Cookies
Ingredients
- 1 cup Cassava Flour
- ½ cup Mashed Ripe Banana
- ¼ cup Coconut Oil melted
- ¼ cup Pure Maple Syrup
- ½ teaspoon Cinnamon
- ½ teaspoon Cream of Tartar
- ¼ teaspoon Baking Soda
- ¼ cup Dried Cranberries finely chopped
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine all dry ingredients.
- In a separate bowl, mix the mashed banana, coconut oil, and maple syrup until well combined.
- Gradually add the wet mixture into the dry mixture and stir until you have a cookie dough consistency.
- Fold in the chopped dried cranberries.
- Use a spoon to drop spoonfuls of the cookie dough onto the prepared baking sheet.
- Flatten the cookie dough slightly with the back of the spoon to your preferred thickness.
- Bake in the preheated oven for 10-12 minutes, or until the edges start to turn golden brown.
- Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
