Lemon roasted asparagus is a quick and easy side dish with fresh lemon juice and garlic. It’s so simple to make, you’ll want to make these again and again.
Asparagus makes a perfect side dish to any meal and roasting it brings out the best flavor. Spring is when it’s in its peak season, which also means it’s on sale at most grocery stores. It is also on the Environmental Working Group Clean 15 list, so you don’t need to buy organic.
Store asparagus standing upright leaving the rubber band attached. Place them in a little dish or jar of water in the refrigerator with just enough water that the ends are submerged, this helps preserve its freshness.
You can also dampen a paper towel and wrap it around the ends to help hold moisture, keep it in the plastic bag you got from the grocery store.
When preparing asparagus, trim the ends of the stalks that are a little rough and woody. You may need to trim up to a half inch or so. Discard the ends or save them for your compost pile. If you’re like me and have dogs feed it to them, they love asparagus, and its good for them too.
It is loaded with nutrients, it’s anti-inflammatory, it helps with digestive support, and is a good source of fiber. It has vitamins A, C, E, and K, it also helps our brains fight cognitive decline.

Lemon Roasted Asparagus
Ingredients
- 1 pound asparagus trim ends
- 2 tablespoons coconut oil
- 3 cloves garlic minced
- Juice from 1 lemon
- Sea salt & fresh ground pepper to taste
Instructions
- Preheat oven to 425º F.
- Add all ingredients to bowl except asparagus, mix then add asparagus.
- Place asparagus on parchment paper lined baking sheet.
- Lay flat and place into oven for 10-12 minutes, or until tender and crisp.
