Spinach Turkey Burger

Ingredients
1
lb
free-range ground turkey
½
red onion
finely chopped
10
cups
fresh spinach
torn into pieces (1 cup sautéed)
2
cloves
garlic
minced
1
teaspoon
fresh ground flaxseed
or flaxseed meal
2
tablespoons
coconut oil
divided
Salt and pepper to taste
Instructions
In a large skillet with high sides over medium heat, melt 1 tablespoon coconut oil.
Add onion, stir for 5 minutes.
Add spinach and cover for one minute, stir and cover for another minute. Spinach should be wilted, if not repeated.
Pour spinach and onions into large bowl and let cool. Meanwhile, add the rest of coconut oil to skillet and coat skillet.
Add ground turkey, flaxseed, minced garlic, salt and pepper to bowl of spinach.
Mix all ingredients, make sure the spinach and onions have cooled so you don’t burn yourself!
Form the ground turkey mixture into 6 equal balls.
Flatten, add to skillet and cook, about 5 minutes per side or until no longer pink inside.
Notes
Substitute thawed-out frozen spinach for fresh spinach.
