Classic Garden Slaw

This is a quick and easy slaw and takes only minutes to prepare so you can get it to the table in no time at all.

Ingredients
  

  • ½ large cabbage or 1 small cabbage
  • 2- Carrots shredded
  • 4- Radishes chopped
  • 4- Scallions thinly chopped
  • 2 tablespoons coconut oil
  • 1 tablespoon apple cider vinegar
  • Juice from 1 lemon
  • 2 garlic cloves minced
  • 1 teaspoon ginger
  • Sea salt and fresh ground pepper to taste
  • Parsley to garnish optional
  • 1 tablespoon flaxseed optional

Instructions
 

  • In a large skillet over medium heat melt the coconut oil then add the garlic and scallions, stir for one minute.
  • Add cabbage, carrots, apple cider vinegar, lemon juice, ginger, salt, and pepper.
  • Stir for 3 minutes.
  • Remove from heat and stir in the radishes and flaxseed.
  • Serve warm or cold.
