Indulge in these fun and delicious patriotic fruit parfaits! You can easily put these together in no time at all and watch them disappear even quicker!
The strawberries, coconut cream, and blueberries make the perfect patriotic dessert! You will have to plan ahead and put the coconut milk in the refrigerator overnight for it to separate. When it has separated just scoop the cream off the top and save the coconut water for later.
The easiest way to get the cream out is to turn the can upside down and punch a hole in it, drain the liquid out then open the can using a can opener to get to the cream.
For coconut milk, I like to use Native Forest Organic Coconut Milk. It does have guar gum, but it is packaged in a BPA-free can. BPA stands for bisphenol A, it is an industrial chemical that is used to make certain plastics and resins. BPA-lined cans leak into the food causing many possible health effects.
Plus, BPA is a synthetic estrogen that disrupts the endocrine system, even in small amounts. It has been linked to many illnesses, including cancer, obesity, and diabetes, and may also activate autoimmune responses.
Patriotic Fruit Parfaits
Ingredients
- 1 cup organic blueberries
- 1 cup organic strawberries halved
- 1 can full-fat coconut milk I use Native Forest
- A sprinkle of powder Stevia or a drop of liquid Stevia to taste
- ½ teaspoon vanilla optional
Instructions
- Refrigerate the full-fat coconut milk the night prior.
- Place a small glass bowl and the beaters in the freezer for at least 30 minutes to help keep the coconut fat cold.
- Open the coconut milk, by this time the fat has separated and has risen to the top. Scoop the fat out and save the coconut water.
- Using a mixer or handheld mixer, whip the cream adding the Stevia and vanilla.
- Mix for about one minute, that’s it!
